The main culinary arts program in British Columbia, located at Vancouver Community College, Downtown Campus is a one-year program offering its graduates a culinary art certificate. This program provides students with the training needed to work in all areas of the food service industry, including positions such as assistant cook and cook apprentices. The program is offered over two terms. Key areas of instruction include: baking and desserts; basic kitchen skills; meat, poultry and seafood cooking; vegetable and starch cooking; appetizers and hors d’oeuvres; kitchen management and nutrition; specialty desserts.

At 10:30 after morning coffee and pastries in the Hospitality Tower we will have an overview presentation from the high energy, dynamic Chef John-Carlo Felicella, Head of the Culinary Arts program. He will explain the necessary requirements for entry into the program, a description of the program (500 students), their course of training and the prospects for successful employment for its graduates and the future needs and expansion required to keep this a successful program. Afterwards, we will tour several of the kitchen workstations.

We will finish with a three-course lunch at JJ Restaurant, including coffee and tea. Wine and alcoholic beverages are available at cost.

Of note, VCC food services feed over 1500 members of the public each day in their cafeteria and two restaurants. The Sieffert Market, located adjacent to JJ restaurant offers a large variety of culinary products for sale at bargain prices. (NOT TO BE MISSED!)

Arrive by at least 10:15 – ENTER Vancouver Community College at Dunsmuir and Hamilton Street intersection – directly across from the Vancouver Playhouse. We will guide you the rest of the way. Easy Park parking available on Cambie Street (behind QE Theatre) between West Georgia and Dunsmuir -or come by public transportation.
